How do I properly hold my knife?

This knife features NextGrip™ ergonomic handle technology. While you can use the knife in whatever position feels comfortable, it was carefully designed to be held in the “pinch grip” position taught in kitchens and culinary schools around the world. To take full advantage of the design, place your thumb and index finger on the part of the grip that extends into the blade with your thumb in position (A) and your index finger in position (B). Doing this will give you greater control over the blade as well as support and comfort while cooking.

What is the best way to sharpen my knife?


If you do wish to sharpen your knife, we recommend using a sharpening stone and jig to maintain your knife’s 17 degree angle. Please don’t hesitate to drop us a line if you have any sharpening questions.

Are there any special cleaning instructions? 

Proper care of your San Sebastian™ will help to ensure years of enjoyment. Wash the blade between uses and although it’s resilient, try not to leave it submerged in water for extended periods of time. Drying the blade after washing helps to further protect the steel and is HIGHLY recommended! Also NEVER put your knife in a dishwasher.

The name San Sebastian pays tribute to the Basque city renowned for its culinary innovation. We love eating and exploring in San Sebastian and felt that no city better embodied the creativity, science, and craftsmanship that is the inspiration for our new knife.
